Van Life Meals From Season Three 2021

Are you struggling with what types of meals you can prepare while on the road? To help you come up with ideas, we put together a list of the different types of food we prepared during Season Three in 2021. Hopefully they will inspire you.

We usually only cook dinner. Breakfast is usually something cold, like yogurt and/or cereal, or something simple like instant oatmeal. Lunches are also usually cold, such as cold cut sandwiches or chips and salsa. Occasionally, we’ll cook something like pancakes or French toast, but it will be for dinner instead of breakfast. All of our food was prepared using our electric tea kettle (paid link), our single burner butane stove (paid link), and our Instant Pot (paid link). On occasion, we also used an Omnia Oven (paid link) on top of our butane stove.

Here’s the list, in no particular order:

Cold cut sandwich with lettuce and tomato

Grilled cheese sandwich with homemade tomato soup

Yogurt with granola and fresh blueberries

Lettuce salad with hard boiled egg and tomatoes, topped with homemade Thai peanut dressing, along with an apple on the side

Cucumbers and flour tortillas dipped in homemade hummus

Greek quinoa (we leave out the olives)

Chicken taco with cheese and salsa

Pasta with bacon and tomato sauce

Tortilla chips and salsa

Peanut butter and honey sandwich (brings back childhood memories for Left Buddy)

Tortilla pizza with Pepperoni, green peppers and onion (uses a flour tortilla as the crust)

Reuben sandwich

Bratwurst sandwich with sauerkraut and a side of cantelope melon

Granola bars and apples for food on the hiking trail

Baked sweet potatoes with butter and brown sugar

Gazpacho soup (refreshing on a hot day)

Pulled pork sandwich

Pulled pork quesadilla with homemade pico de gallo

Cheesy broccoli quinoa

French toast with fresh berries and honey

Roasted beet salad with homemade cilantro lime dressing

Pasta with lemon cream sauce

Buttermilk pancakes with butter and fresh blueberries

Rice and black beans with tomatoes, green peppers and onions

Thai cucumber salad

Fried cabbage with tomatoes and sweet potatoes

Fresh sliced peaches

BLT’s and corn on the cob (steamed in the Instant Pot)

Quinoa tabouleh

Buttered pasta with broccoli and crushed red pepper

Gyros

Homemade applesauce with cinnamon (great way to use apples that are getting old)

Cucumber salad with mayonnaise

Sloppy Joes

Baked potato topped with broccoli and homemade cheese sauce

Apples and peanut butter

Chicken peanut curry with red bell peppers

Crackers topped with cheese from local Vermont dairy

Blueberry pancakes topped with Vermont maple syrup (needed to make use of those souvenirs)

Attempted nachos in the Omnia Oven (had hard time getting the cheese to melt)

Pan fried kielbasa with garlic green beans and mashed potatoes

Egg scramble with bacon and summer squash

Wilted lettuce salad

Homemade cream of broccoli soup with cayenne pepper

Mediterranean quinoa

Homemade egg drop soup

French toast with blueberries and Vermont maple syrup

Potato pancake with applesauce

Homemade chili

Fried eggs, bacon and toast

Apple brownies baked in the Omnia Oven on top of the butane stove

Crackers and peanut butter

Celery soup (substituting feta for stilton cheese) with garlic toast

Pan fried pork loin and zucchini with mashed potatoes

Chicken, cheese, and salsa on top of tortilla chips

Southwestern chicken soup with avocado (using canned chicken instead of turkey)

Chicken salad sandwich made with grapes and celery

Asian slaw

Egg scramble with bacon and zucchini

Pan fried hamburger

Pasta with Italian sausage and green peppers

Apple baked in the dying campfire, topped with butter and brown sugar (didn’t want to waste those beautiful red hot coals)

Fried egg sandwich with bacon, lettuce, and tomato

Cooking on the road does not have to be boring, nor does it have to be time-consuming or expensive. Typing up the list of things we ate last summer is making me hungry! We hope it helped you think of new things you can eat while traveling.
